Scenes from christmas morning breakfast. I have been looking forward to this meal all year! We had our famous 'Swedish pancakes' - crepes filled with a yogurt based sauce that makes my knees go weak. My new years resolution is not to wait until next christmas to make this delicious meal again. I hope you will join me.
1 cup milk
1/4 tsp salt
3/4 cup flour
2 tbs. melted butter
1/2 tsp baking powder
mix in blender...30 seconds
add 1/2 cup of milk & mix a bit more.
let sit for at least a half an hour.
heat small non-stick fry pan(s) & spray with vegetable oil.
add 2 tbs of pancake batter into pan & swirl the mixture around in the pan.
let cook & flip to cook both sides.
repeat until all the batter has been used.
The secret yogurt sauce.
1 cup plain yogurt
1/2 teaspoon vanilla extract
three shakes of cinnamon (to taste)
dash of all spice
1/2 cup sugar
mix & pour into crepe. Roll up pancake & enjoy! Pairing with fresh berries & loved ones is highly recommended. This recipe satisfies about 6 people.* The meal takes about an 60 minutes to prepare, including the 30 minutes to let the batter settle (multiple fry-pans are recommended to speed up the process).
